Ingredients for 2 servings:
- 1 mango(s), ripe
- 2 balls of mozzarella
- 1 onion(s), red
- 1 zucchini
- 10 basil leaves
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp chili flakes
- some salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel the mango, halve it, scoop out the pit, and then thinly slice the flesh. Halve the mozzarella balls and then thinly slice them. Peel the onion and slice it into thin half rings. Thinly slice or slice the zucchini. Finely slice the basil. Arrange all ingredients except the basil alternately on two plates. Mix a dressing of lemon juice, olive oil, chili flakes, salt, and pepper, drizzle over the salad, sprinkle with the basil, and serve immediately. Enjoy it as a vegetarian dish on its own, or serve with roasted chicken breast seasoned with a little curry, or with prawns and garlic.
