Fruity summer fitness muffins with mango

Ingredients for 4 servings:

  • 250 g low-fat quark or skyr
  • 100 g mango(s), fresh or frozen
  • 30 g coconut flour
  • 30 g wheat bran or spelt bran
  • 50 g protein powder, e.g. with banana flavor
  • 3 m.-sized eggs
  • 1 tbsp psyllium husks
  • 3 tsp cream of tartar baking powder or similar
  • 6 drops of Flavdrops, e.g. with strawberry flavor
  • 3 tbsp xylitol (sugar substitute) or other sweetener

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Low-carb

Combine the dry ingredients and baking powder, then stir in the low-fat quark and chopped fruit. Then add the eggs and sweetener. Since I wanted to bake a nice and sweet low-carb snack, I chose strawberry-flavored Flavdrops and added a little erythritol. This can be varied, of course, as can the protein powder; I only had banana flavor at home. Pour the batter into muffin cups and bake at 180-200°C (top/bottom heat) for 30 minutes, depending on your oven. Don’t let it overcook. Let it cool completely before eating. Makes about 12 muffins.
