Gà Xào Gùng
The perfect gà xào gùng recipe with a picture and simple step-by-step instructions.
dressing
- 8 tbsp Raw cane sugar
- 6 tbsp Fish sauce
- 1 Red Chilli, pitted and finely chopped
- 1 Lime, the juice
Rice noodle salad
- 100 g Rice noodles
- 2 Tomatoes
- 1 Red Paprika
- 0,5 Mini cucumber
- 0,5 bunch Coriander

Ginger chicken
- 2 Chicken breasts
- 1 tbsp Strength
- 50 g Ginger, very finely chopped
- 2 Garlic cloves, thinly sliced
- 4 tbsp Caramel syrup, see my KB: http://www./rezept/479752/Karamell-Sirup.html
- 2 tbsp Fish sauce
- Black pepper from the mill
- Oil
dressing
- Put the raw cane sugar and the fish sauce in a saucepan and cook while stirring until the sugar has completely dissolved, then remove the saucepan from the stove, add the chilli and the lime juice, pour into a container and let cool down completely.
Rice noodle salad
- Put the rice noodles in a bowl, scald with boiling water, leave to stand for 10 minutes and then strain over a sieve, quench and drain well. Then put it back in a bowl and cut to size with the scissors.
- Score the tomatoes in a cross shape, blanch for about 30 seconds in boiling water, quench, peel, remove the drunkenness, core and cut into small cubes and add to the rice noodles. Peel the cucumber, dice it finely and add it to the rice noodles.
- Peel the peppers with the peeler, remove the seeds and cut into fine cubes and add to the rice noodles. Finely chop the coriander and add it too. Mash the confit garlic cloves with a fork and add to the salad and mix everything together very well.
Ginger chicken
- Cut the chicken breasts into bite-sized slices and place in a freezer bag, add the starch and then distribute the starch on the outside of the chicken pieces.
- Heat some oil in a pan and add the chicken pieces. Immediately drizzle with the caramel syrup. Fry the chicken, turning and over high heat, until the meat is coated with a nice layer of caramel. Now add the garlic, ginger, fish sauce and a little pepper and toss for another 2 minutes.

- Arrange some of the rice noodle salad in a shallow bowl, pour some of the dressing over it and arrange the meat on the salad. We had a tsingtao beer with it.
