Ingredients for 1 servings:

  • 500 g wholemeal spelt flour
  • 500 g whole wheat flour
  • 60 g chia seeds
  • 120 g sunflower seeds
  • 120 g hazelnuts, peeled
  • 135 g carrot(s), grated
  • 100 g apple, grated
  • 100 g pear(s), grated
  • 1 cube of yeast
  • 1 tbsp salt
  • 40 g caramel syrup or honey
  • 1 tbsp vinegar essence
  • 50 g oat flakes, wholegrain
  • 800 ml water, warm

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Combine both flours, chia seeds, sunflower seeds, hazelnuts, and salt in a large mixing bowl. Make a small well in the center and add the caramel syrup. Crumble the yeast onto it and mix with a little warm water to dissolve. Then add the remaining water while kneading with a food processor. Add the grated carrots, apples, and pears to the dough along with the vinegar. Finally, knead in the oats. Place the dough in a large bread pan and place in a cold oven. Bake the bread for about one hour at 180-200°C. After about 10-15 minutes of baking, cut the bread 1 cm deep lengthwise with a sharp knife. It is done when it makes a dull sound when tapped. The bread has a crispy crust and is wonderfully moist on the inside.
