Game Ragout with Mushrooms
The perfect game ragout with mushrooms recipe with a picture and simple step-by-step instructions.
- 200 g Mushrooms
- 600 g Venison
- 2 Shallots
- 4 tbsp Creme fraiche Cheese
- 2 tbsp Tomato paste
- 2 tbsp Mustard
- 8 El Port wine
- 8 El Red wine
- 1 tbsp Balsamic vinegar
- 2 Tl Spice mix (wild spice)
- Cloves, ground
- Salt pepper
- Oil to fry
- Cut the venison fillet into pieces, rub in well with the game and fry briefly on all sides in a pan with oil. Then take it out of the pan and let it cool down. Add port wine, red wine, creme fraiche, mustard, honey and tomato paste to the meat stock in the pan and mix well. Bring to the boil briefly with vinegar, ground cloves, salt, pepper and game spices.
- Clean the mushrooms, cut them into small pieces and sauté them with the shallots in a pan with butter, fry everything briefly, pour the potatoes over them, put in the meat and steam until the meat is done.
