Fried garlic mushrooms

Ingredients for 4 servings:

  • 500 g fresh mixed mushrooms (boletus, champignons, oyster mushrooms, chanterelles)
  • 1 sprig(s) mint, fresh
  • 1 lemon(s), the juice
  • 4 garlic cloves
  • 2 tbsp tomato paste
  • 5 tbsp olive oil
  • 1 tsp butter
  • Salt and pepper from the mill

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Clean the mushrooms thoroughly, slice very thinly, and drizzle with 1 tablespoon of lemon juice. Finely slice 3-4 garlic cloves. Heat 5 tablespoons of olive oil in a pan. Add the mushrooms in batches, fry briefly, remove, and set aside. Preheat oven to 200°C. Melt 1 teaspoon of butter in the pan. Stir in the garlic and fry gently, then add the remaining lemon juice. Stir in 3 tablespoons of tomato paste, season with salt and pepper. Return all the mushrooms to the pan, mix thoroughly, and season to taste. Transfer the mushrooms to a decorative ovenproof clay dish. Bake in the preheated oven (gas mark 3) for 10 minutes. Sprinkle with mint leaves and serve piping hot in the clay dish.
