Ingredients for 8 servings:

  • 1 kg game meat (chamois), frozen
  • 350 g bacon
  • 2 spring onions
  • 2 eggs
  • 1 slice(s) of stale bread
  • ½ bunch chives
  • ½ bunch parsley
  • ¼ bunch coriander
  • e.g. salt and pepper
  • e.g. paprika powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wild chamois patty

Put frozen chamois meat and bacon through a grinder or buy it chopped. Finally, add a slice of hard bread to the grinder to grind the leftover meat. Note: The meat is frozen so it binds and is easier to shape. Finely chop the spring onions and herbs and add them. Add the eggs. Season with salt, pepper, and paprika as desired. Knead everything well into a firm dough (if available, use the dough hook on a food processor). Shape approximately 140g of the meat into a burger patty. Grill on each side or freeze for later.
