Wild boar burger of the extra class

Ingredients for 2 servings:

  • 240 g minced wild boar meat
  • 1 tsp thyme
  • salt and pepper
  • 2 slice(s) pork belly, cured
  • 2 rolls (sesame rolls)
  • 100 ml red wine, sweet, more if needed
  • 1 onion(s), red
  • 1 plum(s)
  • 1 fig(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

with fruity red wine sauce

Season the wild boar mince with thyme, pepper, and salt, and knead well to distribute the seasoning evenly throughout the meat and not just on top. Form two patties. Bring red wine, chopped onion, plum, and fig to a boil in a pan. Simmer until tender. Add a little more red wine if needed. Brown the pork belly on both sides, then add the patties and buns to the grill. Assembling is easy. Spread some red wine sauce on the bottom, top with the pork belly and patty, and then more red wine sauce. Put the lid on, and you’ve got what I think is a delicious wild boar burger.
