Garlic cream from Greece

Ingredients for 4 servings:

  • 400 g potatoes
  • 4 garlic cloves
  • 4 tbsp white wine vinegar
  • salt and pepper
  • 100 ml olive oil
  • 1 bunch oregano, fresh

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

Peel the potatoes and boil them until tender. Peel the garlic. In a blender, puree the cooled potatoes with garlic, vinegar, salt, and pepper. Gradually stir in the oil until creamy. Finely chop the oregano and fold it into the garlic cream. Serve with flatbread and a glass of wine (retsina in Greece).
