Ingredients for 4 servings:
- 500 g carrot(s)
- 500 g peach(s)
- 3 lemons (untreated peel)
- 500 g gelling sugar, 2:1
- 1 tbsp sugar

Peel and wash the carrots and slice them thinly. Blanch the peaches in hot water, peel them and cut them into small pieces. Wash the lemons in hot water, grate the peel and mix with a tablespoon of sugar. Now squeeze the lemons (about 1/8 l juice, if not enough add water) and simmer the carrots in it until soft. Add the peach pieces and puree everything with a hand blender. Let the puree cool, add the lemon zest and gelling sugar. Bring to a boil briefly according to the instructions on the gelling sugar packet. Immediately fill into jars with screw lids. It is best to rinse them with hot water beforehand. After filling, turn them upside down for five minutes. In my opinion, it is very tasty and a change from the usual sweet jam spreads for breakfast rolls.
