To refine many dishes

First, peel the garlic and then roughly press it. This shouldn’t result in a paste, but rather the garlic should still retain some structure. Place the garlic and oil in a jar. Then add the herbs and mix everything well. Let it steep for at least 3 hours. Store in the refrigerator. Let it warm up before eating so the aroma can develop. Keep the mixture covered with oil at all times, and it will keep for several months without any problems. It tastes excellent on pizza, in pasta sauces, as a seasoning for baked potatoes, or in meat marinades. The garlic and herb mixture will settle to the bottom. If you just want to give a dish a light garlic flavor, use just a little oil. If you’re serious about the garlic, use some of the “dregs” as well.
