Garlic – Mushrooms

Ingredients for 6 servings:

  • 500 g mushrooms
  • 5 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 1 dashes lemon juice
  • 4 tbsp parsley, freshly chopped
  • salt and pepper
  • 1 lemon(s)

Rub the mushrooms with a cloth and trim the stems close to the cap. Halve or quarter large mushrooms. Heat the olive oil in a cast-iron skillet and sauté the garlic for 30-60 seconds; it should only be lightly browned. Add the mushrooms and cook over high heat, stirring frequently, until the mushrooms have absorbed all the oil. Reduce the heat to low. Once the mushrooms have released their juices, increase the heat to high and simmer for another 4-5 minutes, stirring frequently, until the juices have evaporated. Season with lemon juice, salt, and pepper. Stir in the parsley and briefly toss everything in the pan. Place the mushrooms in a warmed bowl. Garnish with lemon wedges and serve hot or warm. Serve with baguette.
