Garlic-parsley potatoes

Ingredients for 1 servings:

  • 8 medium-sized potatoes, waxy
  • 40 g butter, melted
  • ½ tsp salt
  • ¼ tsp pepper
  • 15 g butter
  • 3 clove(s) garlic, chopped
  • 2 tbsp parsley, flat, dried, or fresh
  • 20 g cheese (Romano), grated, or as desired

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Preheat the oven to 200°C and briefly melt the 40g butter in the microwave. Peel the potatoes and slice them into 4mm thick slices using a mandoline. Place the potatoes in a bowl, add the butter, salt, and pepper, and mix with your hands. Layer the potato slices in a baking dish and bake in the preheated oven for 35 minutes, or until golden brown. Meanwhile, heat the remaining butter in a pan. Sauté the garlic, add the parsley, stir, and remove from the heat. When the potatoes are ready, remove them from the oven. Spread the garlic and parsley mixture over them, sprinkle with cheese, and serve.
