Ingredients for 4 servings:

  • 750 g potatoes, floury, peeled
  • 1 tsp salt
  • 60 g butter
  • 3 egg yolks
  • 1 pinch of white pepper
  • 3 tbsp butter for the baking tray and for spreading

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Boil the potatoes in salted water, drain, allow to cool, and press them through a potato ricer while still hot into a mixing bowl. Immediately stir in the melted butter and gradually add the egg yolks. Season to taste, adding more salt if desired. Grease a baking tray, fill a piping bag with the mixture, pipe the mixture onto the doughnuts, and brush the doughnuts with melted butter. Bake in a preheated oven at medium heat for about 15 minutes until golden brown. A decorative accompaniment to beef schnitzel, etc.
