Ingredients for 10 servings:

  • 1 bulb(s) garlic, organic
  • 2 tbsp lemon juice, freshly squeezed
  • 100 ml olive oil
  • ½ tbsp sea salt
  • Olive oil to fill the glass

Peel the garlic cloves and grate them using a Parmesan cheese grater or other fine grater. Mix with olive oil, salt, and lemon juice. Sterilize a screw-top jar for longer shelf life and pour the paste into it. Cover with olive oil and store in a cool place. This intense paste is effective when you don’t want to get your hands dirty, or simply to always have garlic on hand to give dishes the desired flavor in an instant. One fresh garlic clove is roughly equivalent to 1/2 teaspoon of garlic paste. The paste will keep for months in the refrigerator or cool cellar.
