Ingredients for 4 servings:

  • 8 cloves garlic
  • ½ cup(s) oil (olive oil)
  • 1 cup(s) potato(s), mashed
  • 1 cup(s) breadcrumbs, soaked
  • ¼ cup(s) vinegar
  • 1 tsp salt

Skordalia

Crush the peeled garlic cloves in a mortar and pestle with the salt, then mix with the potatoes and bread. Blend thoroughly until a smooth paste forms. Slowly add the olive oil and vinegar, one at a time. While stirring the sauce, mash the potatoes with a pestle or in a blender. Add the garlic and add the olive oil and vinegar drop by drop until the mixture has absorbed the liquid. Beat the mixture until thick. This sauce is served in Greece with boiled or fried fish, baked eggplant, or courgettes. Variations: With nuts: Crush 1/2 cup of nuts or peeled, ground almonds with the garlic. Garlic sauce prepared in a blender: In a blender, add 3-4 garlic cloves, 1/2 teaspoon of salt, 2-3 tablespoons of vinegar, 1 cup of breadcrumbs, 1/2 cup of water, and 5 tablespoons of olive oil. Beat until smooth. If it is not thick enough, add 1-2 tablespoons of breadcrumbs.
