Ingredients for 4 servings:
- 4 tbsp olive oil
- 2 cloves garlic
- 1 tsp salt
- 1 onion(s)
- 1 bunch of spring onions
- 1 bell pepper(s), red
- 100 g squid(s), ready to cook
- 100 g mussel meat
- 100 g prawns
- 1 cup white wine
- 750 ml meat broth
- 1 bay leaf
- 2 carnations
- 100 g noodles (soup noodles)
- salt and pepper
- 1 tbsp basil
- 1 bunch of chives, finely chopped
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Genoese fish soup
Heat the oil in a pan and sauté the garlic clove, crushed with salt. Add the sliced vegetables and sauté briefly. Add the squid, mussels, and prawns, top up with the tomatoes, white wine, and meat broth, and simmer for 10 minutes. Add the bay leaf, cloves, and pasta and simmer for another 5 minutes. Season with salt, pepper, and basil, and serve sprinkled with chives.
