Ingredients for 1 servings:

  • 300 g flour
  • 250 g sugar
  • 125 g butter
  • ½ pack of baking powder
  • 1 egg(s)
  • 50 g sugar
  • 125 g butter
  • 750 g low-fat curd cheese
  • 5 eggs
  • 100 ml cream
  • 3 tbsp cornstarch
  • 1 packet of vanilla pudding powder
  • Food coloring, yellow, optional
  • 100 g red fruits (strawberries, cherries or raspberries)
  • 1 pack of pudding powder (strawberry pudding powder)
  • Food coloring, red, optional
  • 1 pack of chocolate pudding powder
  • ½ cup espresso or strong coffee
  • 3 tbsp baking cocoa
  • Food coloring, black, optional
  • Fat and breadcrumbs for the form

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 3 hours 30 minutes

Suitable for the European Championship or World Cup

First, make a shortcrust pastry from flour, sugar, butter, baking powder, and egg. If necessary, add a little cold water a spoonful at a time to make the dough smooth. Grease a round cake tin and dust with breadcrumbs. Form half of the dough into the base and the other half into the sides. Press the dough down lightly. For the cheese filling, combine the sugar, butter, low-fat quark, eggs, cream, and cornstarch. The butter should be soft or melted. Stir everything until the mixture is smooth. Divide the filling into three portions, with one portion about 100g heavier than the other two. Add the vanilla pudding powder and, if desired, a little yellow food coloring to the heavier portion. Pour this portion onto the pastry and bake at 160°C (fan oven). After 20-30 minutes, the dough should be slightly firmer. During this time, prepare the next steps. For the second layer, finely blend the fruit and mix it with the strawberry pudding powder and red food coloring, if desired, along with another portion of the cheese filling. If you don’t have any strawberry pudding powder, use vanilla pudding powder and add more red food coloring. Once the bottom layer of the cake has firmed up, pour on the red filling, spread it out, and continue baking. Mix the remaining filling with the chocolate pudding powder, coffee, and cocoa powder. When the second layer is firm enough, pour on the chocolate filling and continue baking the cake for another 20-30 minutes. Turn off the oven and remove the cake after 30-60 minutes and let it cool thoroughly. When cut open, the cake should display the pattern of the German flag. During the European Championship or World Cup, this cake will set the mood for football day and is a real eye-catcher!
