Ingredients for 1 servings:
- 100 g butter, soft
- 80 g sugar
- 150 g beetroot
- 1 m.-sized egg(s)
- 400 g flour, sifted
- 1 tsp baking soda
- ¼ tsp salt
- 2 tsp, stripped ginger, ground
- 1 tsp gingerbread spice
- some flour for the work surface
- 80 g powdered sugar
- 2 tbsp lemon juice, strained
- Food coloring (paste), in red

Beat the butter with sugar, beetroot, and egg until thick and creamy. Mix the flour, baking soda, salt, ginger, and gingerbread spice, knead it into the dough, then cover and refrigerate overnight. Dust a work surface with flour, roll out the dough to a thickness of about 5 mm, and cut out about 20 gingerbread man shapes using cookie cutters. Place these on a baking sheet lined with baking paper and bake in a preheated oven at 175 degrees Celsius for about 12 minutes until light golden. Let cool on the baking sheet. Mix the powdered sugar with lemon juice and color some of it with food coloring. Pour both colors into separate freezer bags, cut off a small corner from each, and use them to decorate the figures (e.g., white eyes, red buttons, etc.). Then let them dry.
