Glass noodle salad with red lentils

Ingredients for 6 servings:

  • 2 stalk(s) leeks
  • 2 carrots
  • 250 ml vegetable stock
  • 4 tbsp sesame oil
  • 250 g glass noodles
  • 125 g lentils, red
  • 2 cm ginger root
  • Cayenne pepper
  • curry powder
  • Paprika powder
  • 50 ml soy sauce, according to taste

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Trim the leek, slice it into thin rings, and wash it. Peel the carrots and ginger, and grate them in a food processor. Sauté the leek, carrots, and ginger in sesame oil. Add the lentils and deglaze with the vegetable stock. Simmer for about 5 minutes. Pour boiling water over the glass noodles in a bowl and let stand for 5 minutes. Drain the glass noodles and return them to the bowl, then cut them into smaller pieces with scissors. Add the vegetables to the glass noodles. Season with soy sauce and the spices. Delicious both hot and cold.
