Glass noodle salad with turkey meat Russian-Korean style

Ingredients for 4 servings:

  • 250 g glass noodles
  • 350 g turkey or red beans
  • 2 large carrots
  • ½ radish(s)
  • 1 red bell pepper(s)
  • 2 garlic cloves
  • 1 small onion(s)
  • 3 tbsp soy sauce
  • salt and pepper
  • 1 tbsp tomato paste
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

or without meat, with red beans

Cut the turkey into small pieces (vegetarians can use red beans instead of the meat!), fry them in a little oil, and remove from the pan. Grate or slice the carrots and radish into thin sticks, and finely dice the bell pepper and onion. Fry everything one after the other. Then add everything to a large pan and continue frying. Crush the garlic and add it with the tomato paste, and fry briefly. Season with salt and pepper. Add the glass noodles to boiling water, turn off the heat, and let the noodles stand for 3 minutes until they are translucent. Place in a colander and drain. In a large bowl, add the glass noodles, then the vegetable and meat mixture. Mix well, add the soy sauce, and season to taste. Can be eaten hot or cold.
