Glass noodles with chicken and/or turkey

Ingredients for 2 servings:

  • 125 g glass noodles
  • 250 g chicken breast fillet(s) and/or turkey meat
  • 1 stalk(s) leek, cut into rings
  • 5 carrots, peel and slice
  • 2 handfuls of soy sprouts, fresh, not in a jar
  • 2 tsp broth, clear
  • Soy sauce
  • some flour
  • Spice mix (Chinese spice)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

(Best done in a wok or a large, deep frying pan) Cut the meat into small pieces, season with a little Chinese spice, and fry with the carrots. Place the glass noodles in the warm water for about 5 minutes. Add the leek to the meat and carrots and deglaze with about 1/2 – 1 liter of water. When it’s gently simmering, add the clear stock and season to taste with a little soy sauce and Chinese spice. Now add the bean sprouts and stir in. At the very end, stir in the glass noodles and thicken with a little flour or sauce thickener, if desired. The glass noodles absorb quite a bit of the liquid. (You can also use other vegetables; that’s just my taste.) Enjoy!
