Ingredients for 4 servings:
- 350 g onion(s), very small white
- 50 g butter
- 1 tbsp sugar
- salt and pepper
- ¼ liter meat broth or vegetable broth

Place the unpeeled onions in a sieve and immerse it in boiling water for about three minutes. This makes peeling the onions easier. Melt 30g of butter in a saucepan with the sugar. Brown the onions, then cover with stock and simmer until the liquid has evaporated. Season with salt and pepper. Add the remaining butter in small pieces, melt, and toss the onions in this syrupy juice. Vegetarians can simply use vegetable stock. It also tastes good mixed with snow peas.
