Ingredients for 1 servings:
- 270 g flour, gluten-free
- 60 g cornstarch
- 200 g butter
- 100 g sugar, white
- 100 g granulated sugar
- 50 g brown sugar
- 1 small egg(s)
- 1 pinch of salt
- 50 g almonds, ground or hazelnuts
- 1 vanilla pod(s), including the pulp
- 1 kg apples
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 50 minutes
For the base, cream the white sugar with 100g butter and the egg until creamy. Then mix with 170g flour, 50g cornstarch and salt and chill for 30 minutes. For the crumble, mix the ground almonds, 100g flour, granulated sugar and 100g butter into a dough and chill for 30 minutes. Peel, core and dice the apples. Sweeten with the brown sugar and add the remaining cornstarch and the vanilla bean seeds. Roll out the dough for the base and place in a 26cm springform pan. Pour in the apple mixture and cover with the crumble. Bake the cake at 180°C for about 50 minutes. Serve with whipped cream.
