Ingredients for 1 servings:
- 350 g flour mix (Schär bread mix), gluten-free
- 100 g buckwheat flour
- 50 g flour mix (dark flour mix from Seitz), gluten-free
- 1 ½ tsp Himalayan salt or sea salt
- 50 g yellow flaxseed
- 50 g sesame seeds
- 10 g puffed amaranth
- 2 tbsp psyllium husks
- 1 tbsp chia seeds
- 2 tbsp apple cider vinegar
- 1 tsp, levelled sugar
- 1 cube of yeast
- 550 ml water, warm
- some butter for the mold
Instructions
Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 45 minutes

Crumble the yeast and dissolve it in the water with the sugar. This takes about 5-8 minutes. Stir only at the end. In the meantime, weigh or measure all the remaining dry ingredients, place them in a mixing bowl, and mix. Pour in the apple cider vinegar and the yeast-water mixture and let it knead, ideally in a food processor, for at least 10 minutes. This can also be done with a hand mixer, but it’s strenuous. The dough should still be sticky but somewhat pliable; you may need to add a little more water, depending on the type of flour. Then brush a king cake pan with butter and place the dough—I divide it in half and form small loaves—side by side in the pan. Place in the oven, cover with a cloth, and set the oven to a maximum of 40°C. Let it rise for 15 minutes. Remove the cloth and score the loaves with a knife about 4 times across, 1 cm deep. Leave in the oven and set the oven to 200°C (top and bottom heat) and the timer to 60 minutes. The oven door should remain closed during the baking time. After 60 minutes, remove the bread from the tin and bake for another 10 to 15 minutes, bottom-side up. Let cool on a wire rack for several hours. The flour mix is very important for the flavor, especially in gluten-free breads. Other flours—which can also be used—will naturally vary the taste. The grains and seeds are interchangeable; for example, hemp seeds, sunflower seeds, pumpkin seeds, or walnuts are also possible.
