Ingredients for 4 servings:

  • 2 kg ham, mildly cured, pre-order from the butcher
  • 1 tsp sugar
  • 1 ½ tbsp mustard,
  • 1 bunch of fresh herbs (tarragon, marjoram, lovage, sage, savory)
  • 2 onions
  • 4 garlic cloves
  • 4 carnations
  • n. B. Cranberry compote

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

from the roasting bag

Rub the ham with sugar and spread with mustard. Sprinkle with half of the chopped herbs, onions, and garlic, and press everything down firmly. Place the remaining herbs, etc., along with the ham, cloves, and 1 tablespoon of water in a roasting bag and pierce the bag according to the instructions. Roast in a preheated oven (220 degrees Celsius) for about 45 minutes, then reduce the temperature to 180 degrees Celsius and roast for another 45 minutes. Carefully remove the ham from the foil and slice it open. Purée the meat juices with the herbs and cranberries to taste and serve as a sauce. Delicious cold or warm.
