Gluten-free pancakes with apple

Ingredients for 4 servings:

  • 200 g flour mix, gluten-free, e.g. Flour-Mix light from Hammermühle
  • 100 g buckwheat flour (wholemeal buckwheat flour)
  • 60 g oat flakes, small-leaf, gluten-free
  • 2 packets of vanilla sugar
  • 3 tsp baking powder
  • 3 eggs
  • 330 ml milk
  • 1 large apple
  • some oil
  • some butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Combine all ingredients except the apple, oil, and butter and mix with a spoon. Peel the apple, quarter it, slice it, then cut it into pieces, and add it to the batter. Fry a good tablespoon of batter per pancake in a pan with oil and a little butter until the pancakes are nicely risen and browned on both sides.
