Gnocchi casserole with tomatoes and snow peas

Ingredients for 4 servings:

  • 1 package of gnocchi, dried
  • salt water
  • 100 g ham, raw
  • 250 g tomatoes
  • 450 g sugar snap peas (frozen)
  • 1 small onion(s)
  • 1 tbsp tomato paste
  • 1 class can/n tomatoes, chunky (pizza tomatoes)
  • 200 ml broth
  • 100 g cream cheese or sour cream
  • ½ package of herbs (frozen)
  • 100 g cheese (Gouda or Parmesan)
  • n. B. Oil
  • salt and pepper
  • Sugar

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

quick, easy and delicious

I didn’t measure everything while cooking, so the quantities are only approximate. Boil salted water and cook the gnocchi according to the package instructions. In the meantime, finely dice the onions, cut the ham into small pieces, and halve the tomatoes. Drain the gnocchi and add them to the baking dish. Heat the oil in the same pot and fry the onions and ham. Add the tomato paste and fry. Deglaze with the stock and pizza tomatoes and season with salt, pepper, and sugar. Add the thawed snow peas to the sauce and bring to a boil. Add the cream cheese, let it melt, and season again to taste. Finally, add the halved tomatoes to the gnocchi and spread the sauce evenly over them. Sprinkle with grated cheese and bake in an oven preheated to 200°C until the cheese is golden brown.
