Gnocchi pan with minced meat and feta

Ingredients for 4 servings:

  • 2 onions
  • 2 garlic cloves
  • 6 sprigs of oregano
  • 1 can vegetable mix (corn, beans and peppers)
  • 3 tbsp olive oil
  • 400 g minced meat
  • 1 tbsp tomato paste
  • 1 can of tomatoes, peeled
  • 150 ml vegetable stock
  • 100 g feta cheese
  • 20 g butter
  • 500 g gnocchi
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

ready in 20 minutes

Slice the onions into wedges. Chop the garlic and oregano. Drain the vegetable mixture. Brown the minced meat in oil until crumbly. Then add the onions and garlic and fry. Stir in the tomato paste. Add the tomatoes and chop them up. Stir in the broth, vegetable mixture, and 2/3 of the oregano. Season the sauce with salt and pepper, bring to a boil, and simmer for about 5 minutes. Crumble the feta cheese. Fry the gnocchi in butter until golden brown, then stir into the sauce. Sprinkle with the feta cheese and oregano.
