Gnocchi pan with spinach

Ingredients for 3 servings:

  • 2 onions
  • 2 garlic cloves
  • 600 g gnocchi
  • 200 g leaf spinach, fresh
  • 1 pack of mozzarella, approx. 125 g each
  • 2 tbsp tomato paste
  • 1 can of tomatoes, pureed, approx. 400 g each
  • 250 ml cream
  • 1 tsp Italian herbs
  • e.g. basil
  • salt and pepper
  • some olive oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Finely dice the onions and garlic and sauté in olive oil. Add the gnocchi and fry until golden brown. Add the tomato paste and fry. Wash the fresh spinach leaves and add them to the pan along with the passata. Mix well and add the cream. Cover and simmer for 10 minutes. Finally, add the spices and the coarsely shredded mozzarella and simmer for another 3-4 minutes.
