Ingredients for 4 servings:
- 325 g gnocchi
- salt and pepper
- 1 small zucchini, thinly sliced
- 1 red bell pepper(s), cut into small pieces
- 2 tbsp olive oil
- 10 basil leaves
- 1 garlic clove(s)
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 ½ tbsp tomato paste
- 3 tbsp vegetable broth (approx. 30 ml)
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
ideal as a side dish when grilling
Cook the gnocchi in salted water according to the package instructions, drain, and rinse. Fry thin slices of zucchini and small pieces of bell pepper in hot oil and season with pepper. Roughly chop the garlic, mix with the red wine vinegar, olive oil, tomato paste, and vegetable stock. Purée with a hand blender and season with salt and pepper. Mix the gnocchi with the vegetables and vinaigrette. Sprinkle the basil leaves over the salad and serve while still warm. Delicious with white poultry or grilled meats.
