Ingredients for 4 servings:
- 750 g white asparagus
- 750 g asparagus, green
- 250 g scampi, peeled
- 125g mozzarella
- 3 tbsp basil, chopped
- 4 tbsp butter
- 4 tomatoes, quartered
- 2 tbsp olive oil
- 1 tsp sugar
- Salt and pepper (ground pepper)
- Cayenne pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook the asparagus with 2 tablespoons of butter, sugar, and salt for about 12 minutes. Grease an ovenproof dish with the remaining butter and alternate the asparagus. Arrange the peeled, seeded tomato quarters, the scampi, and the basil on top. Sprinkle with the thinly sliced mozzarella, drizzle with olive oil, and season with ground pepper, cayenne pepper, and salt. Bake in the oven at 200°C for about 15 minutes. Serve on toasted bread or with potatoes and pork medallions.
