Gnocchi with mushroom cream sauce

Ingredients for 4 servings:

  • 200 g mushrooms
  • 200 g chanterelles
  • 500 g gnocchi
  • 50 ml Madeira, optionally apple juice
  • 2 shallots
  • 400 ml cream
  • ½ bunch parsley
  • 100 ml vegetable stock
  • olive oil
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cook the gnocchi according to the package instructions. Clean the mushrooms and chanterelles and cut them into strips or quarters, depending on your taste. Dice the shallots and sauté them in olive oil. Add the mushrooms and fry briefly. Deglaze with Madeira wine or apple juice and simmer briefly. Then add the broth and cream. Season with salt, pepper, lemon juice, and honey and simmer until reduced to a creamy sauce. Add the parsley and serve. A mixed salad is recommended as a side dish.
