Gnocchi with peanut pesto and melted tomatoes

Ingredients for 3 servings:

  • 3 servings of gnocchi
  • 80 g peanuts, salted
  • 80 g Grana Padano
  • 2 bunches of basil
  • 200 g cherry tomatoes
  • 13 tbsp olive oil
  • 3 large garlic cloves
  • some salt and pepper
  • 2 pinches of sugar

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Italian gnocchi with an exotic twist of spicy peanut pesto and sweet-aromatic tomatoes

Preheat the oven grill. Chop the peanuts and set some aside for topping. Peel and chop the garlic. Make a pesto with the chopped peanuts, cheese, half the chopped garlic, basil, 10 tablespoons of olive oil, and a little water. Season with a little salt and pepper. Wash and halve the cherry tomatoes. In a bowl, mix them with the remaining chopped garlic, 3 tablespoons of olive oil, salt, pepper, and sugar. Place the tomato mixture on a baking sheet and grill under the oven grill for 5 minutes. Prepare the gnocchi according to the package instructions. Toss the finished gnocchi with the pesto and divide among plates. Serve with the grilled tomatoes and the remaining chopped peanuts.
