Ingredients for 1 servings:
- 1 tbsp walnuts
- 1 tbsp pine nuts
- ½ bunch basil
- 60 g spinach
- 1 garlic clove(s)
- 1 tbsp lemon juice
- 1 tsp matcha powder
- salt and pepper
- 2 tbsp water
- 1 tbsp olive oil
- 100 g spelt pasta
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Lightly toast the walnuts and pine nuts in a pan without oil. Let cool, then add them to a deep bowl with the basil, spinach, garlic clove, lemon juice, matcha powder, salt, pepper, and water. Blend until smooth. Add the oil last. Cook the pasta in a pot of boiling salted water until al dente, drain, toss with the matcha pesto, and enjoy. Approx. 599 kcal per serving.
