Gnocchi with Sage

Recipe for the gnocchi

  • 1 Onion
  • 3 Garlic cloves
  • 5 tbsp Clarified butter
  • 50 g Ground pecorino cheese
  • 1 kg Floury potatoes
  • 300 g Flour
  • 1 Egg
  • Salt
  • Freshly grated nutmeg
  1. Pluck the sage leaves, wash and pat dry.
  2. Peel the onion, cut in half and cut into slices. Peel the garlic and cut into slices.
  3. Put the butter lard in a saucepan and let it get hot. Fry the onion and garlic briefly, then add the sage leaves.
  4. Add the Gnocchi, fry briefly, toss and serve. Take care with the Pecorino.

Recipe for the gnocchi

  1. Boil the potatoes in salted water, peel them and mash them while still hot. Add flour, egg, salt and a little grated nutmeg and process well. The dough must not stick to the fingers, if necessary add a little flour. Form a roll as thick as a thumb, 2 to 3 cm. Cut long pieces and form cams with a fork. Put in boiling salted water; when they swim to the surface take out.
