Gnocchi with Sage
The perfect gnocchi with sage recipe with a picture and simple step-by-step instructions.
Recipe for the gnocchi
- 1 Onion
- 3 Garlic cloves
- 5 tbsp Clarified butter
- 50 g Ground pecorino cheese
- 1 kg Floury potatoes
- 300 g Flour
- 1 Egg
- Salt
- Freshly grated nutmeg
- Pluck the sage leaves, wash and pat dry.
- Peel the onion, cut in half and cut into slices. Peel the garlic and cut into slices.
- Put the butter lard in a saucepan and let it get hot. Fry the onion and garlic briefly, then add the sage leaves.
- Add the Gnocchi, fry briefly, toss and serve. Take care with the Pecorino.
Recipe for the gnocchi
- Boil the potatoes in salted water, peel them and mash them while still hot. Add flour, egg, salt and a little grated nutmeg and process well. The dough must not stick to the fingers, if necessary add a little flour. Form a roll as thick as a thumb, 2 to 3 cm. Cut long pieces and form cams with a fork. Put in boiling salted water; when they swim to the surface take out.
