Gnocchi with tomato and ricotta

Ingredients for 2 servings:

  • 1 small onion(s)
  • 1 garlic clove(s)
  • 400 g cherry tomatoes
  • 500 g potato gnocchi
  • 50 ml olive oil
  • 2 tbsp basil and thyme, chopped
  • 100 g ricotta or cream cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and finely chop the onions and garlic. Wash and halve the cherry tomatoes. Cook the gnocchi in plenty of boiling salted water according to the package instructions, then drain. Sauté the onions and garlic in hot olive oil. Add the cherry tomatoes and sauté. Add the gnocchi, herbs, and ricotta and mix gently. Season with salt and pepper.
