Gnocchi with wild garlic and goat's cheese sauce and turkey

Ingredients for 2 servings:

  • 500 g gnocchi
  • 400 g turkey steak(s)
  • 80 g wild garlic, fresh
  • 1 onion(s)
  • 150 g goat’s cheese
  • 100 ml vegetable stock
  • 70 ml white wine, dry
  • 100 ml whipped cream
  • 120 g peas, frozen
  • e.g. salt and pepper
  • chili flakes
  • possibly sauce thickener, lighter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, dice the onion and roughly chop the wild garlic. Wash the turkey steaks, pat them dry, cut them into strips, and season them all over with salt, pepper, and chili flakes. Briefly fry the gnocchi in a little olive oil and then set them aside. Sauté the diced onion in the same oil, then add it to a bowl with the wild garlic and 4-5 tablespoons of olive oil and puree everything with a hand blender. Then brown the turkey strips all over. Deglaze everything with the white wine, let it reduce slightly, and add the vegetable stock, followed shortly thereafter by the goat’s cheese and the whipped cream. Then add the wild garlic and onion purée, stir everything thoroughly, bring it to a boil, and then simmer. Add the peas and season to taste with salt, pepper, and a few chili flakes. If desired, thicken the sauce with a little light sauce thickener. Finally, add the fried gnocchi to the sauce, stir them in, and heat it back up.
