Goat cheese towers on arugula

Ingredients for 4 servings:

  • 2 tbsp pine nuts
  • 4 slices of bacon
  • 2 apples
  • 1 tsp thyme
  • 1 pack of goat’s cheese (in a roll)
  • 1 bunch arugula
  • 1 tbsp balsamic vinegar
  • 4 tbsp honey
  • 2 tbsp butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Preheat the oven to 225°C. Toast the pine nuts in a pan without fat, stirring occasionally, then set aside. Fry the bacon strips in the same pan until crispy, then set aside. Now cut the apples into 4 thick slices. Don’t just halve them, but trim the ends fairly wide and remove the cores. Sprinkle the apple slices with a little thyme and fry in the same pan until just cooked through. Arrange in a small baking dish, place the bacon slices on top, and then a piece of goat cheese on top. Sprinkle again with a little thyme and place everything in the oven until the cheese is lightly browned. Meanwhile, wash the lettuce and arrange the leaves on serving plates. Place the finished towers on top of the salad, then quickly add the honey, butter, and balsamic vinegar to the still-warm dish and mix to combine. Pour the sauce over the towers and the salad, sprinkle with the pine nuts, and serve.
