Goat cheese with bacon on arugula with fruity mango and avocado

Ingredients for 2 servings:

  • 250 g arugula
  • ½ mango(s)
  • ½ avocado(s)
  • 1 pack of goat cheese or sheep cheese
  • 1 pack of bacon
  • some balsamic cream
  • Mustard
  • Honey
  • oil
  • orange juice
  • Vinegar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash the arugula and divide it between two plates. Dice the mango and avocado and place them on top of the arugula. Mix together 4 tablespoons of mustard, 1 tablespoon of honey, a little oil, a little vinegar, and a little orange juice to make a fruity sauce and pour it over the mango and avocado. Dice the goat cheese, sheep’s cheese, or both, depending on your taste, and wrap each in a slice of bacon. Then fry the cubes in a pan on all sides. Be careful, the goat cheese will run in the pan if it is not wrapped completely! Place the warm bacon cubes on the salad and drizzle with balsamic vinegar. A few dates also go well with this. We were very hungry, so we also had a piece of quiche.
