Goose Lard with Spices

The perfect goose lard with spices recipe with a picture and simple step-by-step instructions.

  • Goose flavors (gut fat)
  • 150 g Lard
  • 1 tsp Dried marjoram
  • 5 Grains Juniper berries
  • 5 Grains Allspice grains
  • 1 Clove
  • 1 Bay leaf
  • 0,25 tsp Salt
  • 2 Apples
  • 2 Onions
  • 0,5 tsp Mugwort
  1. First I heat the lard in a large saucepan. Cut the flom into small pieces and let it roast over an open flame over a low fire, then peel the onions and peel the apples and cut both into small cubes. Add the apples and onions. Sizzle for about 3 – 4 minutes over medium heat. Add the remaining herbs and spices. Simmer everything for about 1/2 hour over medium heat until the apples and onions are lightly browned. Salt last.
  2. Pour everything through a sieve and collect the spices, apples and goose fat.
  3. In glasses filler.
