Goose legs on red cabbage

Ingredients for 4 servings:

  • 1 kg red cabbage, fresh, sliced ​​into fine strips
  • 2 apples (e.g. Boskoop) peeled, pitted, and quartered
  • 1 tbsp salt
  • 2 tbsp sugar
  • 8 tbsp vinegar (blackcurrant or raspberry vinegar)
  • 2 bay leaves
  • 4 goose legs
  • 2 tbsp soy sauce
  • salt and pepper

Place the red cabbage in a sufficiently large roasting pan along with the apples, vinegar, salt, sugar, and bay leaves and mix well. Season the goose legs with salt and pepper, rub with soy sauce, and place them on top of the red cabbage (skin-side up). Place the sealed pan in the oven (175°C) and bake for three hours. Then open the pan and bake for another 15 minutes at 200°C. Of course, the classic potato dumplings and pear with cranberries go well with this dish.
