Gooseberry muffins

Ingredients for 12 servings:

  • 250 g gooseberries
  • 100 g chocolate, white
  • 150 g butter / margarine
  • 1 pinch of salt
  • 125 g brown sugar
  • 1 packet of vanilla sugar
  • 3 eggs
  • 275 g flour
  • 1 packet of baking powder
  • 4 tbsp milk
  • Chocolate decoration (possibly white chocolate rolls)
  • Powdered sugar, for dusting
  • Cocoa powder, for dusting
  • Gooseberries, for decoration

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the gooseberries, finely chop the chocolate, and beat the fat, salt, sugar, and vanilla sugar with the whisk attachment of a hand mixer until light and fluffy. Beat in the eggs one at a time. Mix the flour and baking powder, stirring alternately with the milk. Fold in the chocolate and gooseberries. Place two paper baking cups in each muffin tin, or grease the cups thoroughly and dust with breadcrumbs. Spread the batter evenly. The cups should be about 3/4 full. Bake in a preheated oven (electric oven: 175°C / fan oven: 150°C) for about 25 minutes. Let the muffins rest briefly in the tin, then remove them and let them cool on a wire rack. Decorate with chocolate curls and gooseberries, if desired. Dust with powdered sugar and cocoa.
