Cut off the stems of the apples to form the lids. Remove the cores and the blossoms from the undersides and hollow out the apples a little, making sure the undersides remain closed so the filling doesn’t fall through later. Place the apple flesh in a bowl. Add the Gorgonzola, sour cream, and diced ham to the flesh, mix well. The cheese needs to be evenly distributed, so mash it a little if necessary. Season with salt and pepper. Place the apples in a glass baking dish, fill with the cheese mixture, place the apple lids on top, and bake at 175°C (convection oven) for about 20 minutes. Arrange on serving plates and sprinkle with a little oregano. If you’re making this vegetarian, you can omit the ham, but it will need a little more salt, as the ham itself is salty. Tastes great as a starter, entrée, or dessert!
