Gorgonzola broccoli sauce

Ingredients for 4 servings:

  • 400 g broccoli (cleaned and weighed)
  • 10 cloves garlic
  • 200g Gorgonzola
  • 2 tbsp cream
  • 3 chili peppers, pickled or alternatively sambal oelek
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Bring a large pot of water to a boil. Trim the broccoli florets and peel the stems, keeping all parts very small. Peel the garlic cloves and cut them into sticks. Add salt to the boiling water and boil the broccoli at a rolling boil for about 2 minutes. Remove the broccoli and refresh in ice water. Meanwhile, do the same with the garlic cloves. In a saucepan, mash the cheese with the cream and heat very slowly, stirring constantly. Once the cheese has dissolved, add the remaining ingredients (first chop the fresh chili peppers, remove the seeds), along with the drained broccoli florets and garlic cloves. Season to taste and heat gently without boiling. Serve with green tagliatelle.
