Ingredients for 2 servings:
- 500 g beef goulash
- 150 g mushrooms
- 3 bell peppers, colored
- 230 g gherkins
- 1 m.-sized onion(s)
- 500 ml chopped tomatoes (Passata Rustica)
- 1 tsp tomato paste
- 1 tsp oil
- 1 tsp paprika powder
- 1 pinch of salt
- 1 pinch(s) of pepper

Peel the onion, trim the bell peppers and mushrooms, and dice everything. Cut the beef goulash into bite-sized, roughly equal pieces and the gherkins into small strips. Heat the oil in a roasting pan and fry the beef goulash and onions well on all sides for a few minutes. Then add the tomato paste, stir in, sauté briefly, and season with paprika, salt, and pepper. Add the bell peppers, mushrooms, and gherkins, and deglaze with the chopped tomatoes. Cover and simmer for about 90 minutes. Stir occasionally. If it starts to get too thick, add a splash of water or stock. Towards the end of the cooking time, taste and adjust the seasoning to taste. The long cooking time makes the meat beautifully tender, and the goulash tastes simply delicious! Serve with potatoes, pasta, or spaetzle.
