Gourmet fish with lemon butter

Ingredients for 3 servings:

  • 600 g fish fillet(s), skinned
  • e.g. salt and pepper
  • 1 onion(s)
  • 1 garlic clove(s)
  • 20 g butter, soft
  • 5 tbsp extra virgin olive oil
  • 1 lemon(s), zest and juice
  • e.g. salt and pepper
  • 1 pinch(s) of sugar
  • 1 tsp vegetable stock powder
  • 2 tbsp caper broth
  • 80 g breadcrumbs
  • 20 g Parmesan, freshly grated
  • 1 shallot(s)
  • 1 garlic clove(s)
  • 50 g butter, soft
  • 1 tbsp capers

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

For the sauce, first peel the onion and garlic. Dice the onion and finely chop the garlic. Heat the oil and butter in a saucepan and lightly fry the diced onion and chopped garlic. Tear the zest off the lemon and squeeze the juice. Deglaze the sauce with the juice. Season with salt, pepper, and vegetable stock, add the caper liquid and lemon zest. Bring everything to a boil and simmer for about 5 minutes, then season with sugar. For the gourmet crust, finely chop the drained capers. Peel the shallots and garlic clove and cut both into very small cubes. Mix everything with the butter, Parmesan cheese, and breadcrumbs. Cut the fish fillets into pieces and season with salt and pepper. Pour the sauce into a baking dish and place the fish pieces on top. Spread the crust mixture over the fish and press it down lightly with a spoon. Preheat the oven to 180°C fan/convection oven. Cook the fish for about 25-30 minutes. Then place it under the grill for about another 5 minutes to crisp up the crust.
