Ingredients for 4 servings:

  • 500g spaghetti
  • 250 g asparagus, green
  • 250 g asparagus, white
  • 1 onion(s), red
  • 4 tbsp oil (rapeseed oil)
  • ⅛ liter white wine
  • 1 tsp lemon juice
  • 1 bunch of basil
  • 150 g smoked salmon
  • 2 tbsp pine nuts
  • Salt
  • pepper

Clean the green asparagus. Clean and peel the white asparagus, generously trimming the lower parts. Cut the asparagus spears into 3 cm long pieces. Peel the onion and dice finely. Cook the spaghetti according to the package instructions until al dente. Then drain and set aside to drain. Sauté the diced onion in hot rapeseed oil until translucent and add the asparagus pieces. Pour in the white wine and sauté with the lid on for about 10-12 minutes. Season with lemon juice, salt and pepper. Wash the basil, pat dry, finely chop and mix in. Cut the smoked salmon into fine strips. Add to the asparagus along with the pine nuts and spaghetti and heat briefly. Serve garnished with basil.
