Garlic cream soup

Ingredients for 6 servings:

  • 2 onions
  • 6 garlic cloves
  • 1 tbsp fat
  • ¾ liter vegetable broth
  • ½ liter whipped cream
  • salt and pepper
  • Sauce thickener, light
  • 100 ml white wine
  • 1 egg yolk
  • 1 bunch of chives, cut into rolls

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and finely dice the onions and garlic, and sauté in hot fat. Add the broth, cream, and spices and bring to a boil. Simmer for about 20 minutes, then puree and thicken with a light sauce thickener. Season with white wine and beat with egg yolk. Serve sprinkled with chives. Tip: Serve with cheese pastry.
