Grain cheese salad

Ingredients for 8 servings:

  • 250 g wheat, whole
  • 250 g cheese, in one piece (30%)
  • 3 g bell pepper(s) (red, yellow, green)
  • 2 onions
  • vegetable broth
  • 4 tbsp oil (not olive oil)
  • 4 tbsp vinegar
  • 4 tbsp mustard
  • 1 bunch of parsley
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest period approx. 2 days; Total time approx. 2 days 20 minutes

Boil the wheat grains in robustly seasoned vegetable broth for about 90 minutes and let stand overnight. Then drain the grains. No need to rinse! Chop the cheese, peppers, and onions into small pieces. Prepare a marinade from oil, mustard, vinegar, parsley, salt, and pepper and mix well with the other ingredients. The salad should marinate for at least a day.
